FDA-USDA-FSIS Approvals

"ACS" Acidic Calcium Sulfate / Safe-pHix® brand line is FDA & USDA Approved

FDA approved as a food additive
"ACS"/Safe-pHix® brand solutions are comprised of GRAS (Generally Recognized As Safe) food grade ingredients therefore legislatively allowed in food.


1.       11-9-01 - FDA "no objection" to use ACS in food.

2.       10-3-02 - There appears to be no issues involving    the safety of seafood products treated with "ACS" Acidic Calcium Sulfate - Safe2O®.

3.     1-20-04 - FDA "no objection" to the use of the term "acidic calcium sulfate" for labeling purposes.

USDA/FSIS Approvals & Clarifications

1.      3-12-02 - Letter from FSIS clarifying that when FDA used the term "food" in the letter of 11-9-01, FDA did intend to include meat and poultry products as "food". "… at this time, there are no concerns regarding the safety of the Mionix product."

2.       5-31-02 - FSIS "no objection" to the use of Poultry Wash.

"Therefore, we have no objections to the use of the "ACS" Acidic Calcium Sulfate - Safe2O® Poultry Wash  "pHixr 100 " in federally inspected establishments in poultry operations prior to the chill tank provided it complies with established regulatory guidelines including FDA, EPA, and OSHA requirements."

-Currently, Mionix has no EPA approval for it's USA applications for Poultry Wash.

3.    2-5-03 - FSIS "no objection" to the use of "ACS" Acidic Calcium Sulfate - Safe2O®
(RTE 01).

"FDA has evaluated the safety of use for the treatment of meat and poultry products with
Safe2O® for the treatment of meat and poultry products and has no safety concerns when the substances are added to food in accordance with the uses and limitations specified in Title 21 of the Code of Federal Regulations (CFR)."

"FSIS does not object to the use of "ACS" Acidic Calcium Sulfate - Safe2O® as an antimicrobial agent for use on meat products but because data show that the use of "ACS" Acidic Calcium Sulfate - Safe2O®Safe2O® has a sustained antimicrobial effect in treated product, its use is not consistent with FDA's definition of a processing aid listed in 21 CFR 101.100 (a)(3)(ii)."

"… FSIS feels that the data presented are sufficient to demonstrate the suitability of "ACS" Acidic Calcium Sulfate - Safe2O®Safe2O® to treat sausage and sausage type products."

4.    2-24-03 - Clarification of "ACS" Acidic Calcium Sulfate - Safe2O®Safe2O® approval - descriptive labeling.

"The use of "ACS" Acidic Calcium Sulfate - Safe2O®Safe2O® in meat and poultry products was the subject of an acceptability determination dated February 5, 2002. Safe2O® ( a solution of …..) is approved for use in non-standardized meat and poultry products as well as products with a standard of identity in Title 9 of the Code of Federal Regulations (CFR), provided the products with a standard of identity are descriptively labeled." (This was before the publishing of the FSIS rule regarding the use of any safe and suitable binder or Antimicrobial.)

5.    3-26-03 - FSIS further clarification of "ACS" Acidic Calcium Sulfate - Safe2O® approval - descriptive labeling.

"…. The descriptive labeling approach may apply to any product with a standard of identity in 9 CFR, e.g., "Ham, Water Added, treated with an Antimicrobial solution to reduce microorganisms," etc." (This also was before the publishing of the FSIS rule regarding the use if any safe and suitable binder or Antimicrobial.)

6.    5-9-03 - FSIS "no objection" to the use of the term "acidic calcium sulfate" for labeling purposes.

7.    9-5-03 - With the implementation of the direct final rule, "Approving Ingredients Used in the Production of Meat and Poultry Products: Use of Any Safe and Suitable Binder or Antimicrobial Agent in Meat and poultry Products With Standards of Identity or Composition", standardized products which permit the addition of antimicrobial agents (e.g., hot dogs) may now be treated with "ACS" Acidic Calcium Sulfate - Safe2O® and identified by their standardized name (as opposed to descriptively naming the product as described in the "acceptability determination").

The ingredients of the Safe2O® solution need to be listed in the descending order of predominance by weight or percentage in the ingredients statement on the product labeling.

When Safe2O® is applied to meat or poultry products that do not permit the addition of antimicrobial agents, however, the products will continue to need to be descriptively named, e.g, "Beef steak treated with an antimicrobial solution to reduce microorganisms."

8.    9-22-03 - e-Mail from FSIS regarding:

Suitability of ( RTE 01) on lunch meat loaves- "The validation data that was submitted during the acceptability determination was for the proposed external application to a cooked RTE sausage, i.e., hot dogs. We feel that this data is sufficient for other external applications to cooked RTE products, e.g., other types of sausage (e.g., bologna and pepperoni), and other cooked items such as lunch meat loaves."

The use of Mionix products to achieve Alternative 1 Lm status - as long as the plant has the validation and verification data the use of acidic calcium sulfate appears to satisfy both of the requirements for placing a post lethality exposed RTE product in Alternative 1."

9.    10-29-03 - FSIS "no objection" to the use of RTE 03:

a. On country cured hams for mold control.

b. On cured RTE pork products to prevent the growth of mold and to reduce and suppress the growth of Lm.

10.  11-5-03 - Descriptive labeling

11.  11-20-03 - Using ACS on product contact surfaces

12.  12-5-03 - FSIS "no objection" to the use of Ground Beef Formula in ground beef.

13.  12-12-03 - FSIS "no objection" to the use of RTE 01 on cooked whole muscle poultry.

14.  12-4-03 - Suitability for RTE boneless pork ribs - e-Mail from FSIS- "your previous acceptability determinations, i.e., raw ground beef, cooked RTE meat products, and hams will cover the proposed use on pork ribs." This suitability will be for both RTE 03 and RTE 01. The suitability for hams was given for RTE 03. The "no objection" letter of 9-5-03 allows for the removal of propionic acid, thus suitability for RTE 01.

15.  1-20-04 Suitability for raw pork ribs.

16.  1-22-04 - No objection to the use of "ACS" Acidic Calcium Sulfate - SafepHix® RTE 01 to treat roast beef and other similarly cooked beef products.

  • FDA and USDA Permitted as a Food Additive.

The ACS Technology's SAFE-phix® brand Family of Solutions is a unique broad based proprietary technology with a number of features that benefit a wide variety of industries.

Poultry drinking water, Freshflo or FreshFlo 100 chicken water treatment and drinking water processing is made with ACS Technology SafepHix brand Acidic Calcium Sulfate, ACS 100, for the   poultry industry.  Poultry water treatment with Acidic Calcium Sulfate, ACS 100, FreshFlo or FreshFlo 100 is a food grade acid to adjust food pH, and is primarily applied in the chicken industry for poultry water or chicken water.  The FreshFlo or FreshFlo 100 additive will make the water pure for animal drinking water.

The FreshFlo or FreshFlo 100 made with ACS Technology Inc. Safephix brand Acidic Calcium Sulfate, ACS 100 for animal drinking water can also control salmonella listeria in the water supply system and insures safe well water.  No fear of contamination of water for Acidic Calcium Sulfate, FreshFlo 10, nor pollution of groundwater.

This Acidic Calcium Sulfate, ACS 100, FreshFlo or FreshFlo 100 is also a Poultry nipple drinking line cleaner for safe drinking of poultry water in poultry drinkers that provide automatic chicken water in their chicken watering system.

ACS Technology SafepHix brand Acidic Calcium Sulfate, ACS 100, FreshFlo or FreshFlo 100 is a acidifier for chicken feed, chicken litter, broiler chicken production and in cattle feed additives.

In poultry processing plants, Acidic Calcium Sulfate, ACS 100, A pHixr or phixr 100 is utilized to optimize ORP Oxidation Reduction Potential in chlorinated water processing and maximizing bacterial killing effect.  This produces optimum hypoclorous acid for salmonellosis treatment or bacteria salmonella treatment.

In the food manufacturing and processing industry, ACS TechnologySafepHix brand Acidic Calcium Sulfate, ACS 100 or ACS, is a food agent used as an acidulant or pH adjustment chemicals for Kosher food production.  This application is primarily about food safety.  Depending of application, you may insert on list of food ingredients and on food ingredient labels.

pH adjustment chemicals can be used with ACS Technology SafepHix brand Acidic Calcium Sulfate, ACS 100, pHixr or pHixr 100 for ORP and pH adjustment, and in automatic pH adjuster, such as electronic monitoring pH indicator and dispensing equipment for adjusting pH in water, primarily to lower pH in water. Due to organic matter  (poultry) entering the poultry water or chicken water pushing the pH up, adding Acidic Calcium Sulfate, ACS 100, pHixr or pHixr 100 will increase the ORP of the poultry water processing  in poultry processing plants, optimizing the orp-oxidation reduction potential.

Food processing plants can also benefit in other applications when utilizing Acidic Calcium Sulfate, ACS 100,pHixr or pHixr 100 in their poultry processing water.  The ACS Technology SafepHix brand Acidic Calcium Sulfate, ACS 100, pHixr or pHixr 100 will begin controlling bacterial in floor drains with the food processing plants, as well as throughout the food processing equipment during the food process.  Within the food industry and the making of processed foods, food safety and Listeria salmonella prevention is of a particular concern.  New food processing technology and food processing methods, such as implementing Ready To Eat RTE 01 or rt-01, aka Acidic Calcium Sulfate, ACS 100, pHixr or pHixr 100 on or in the food processes or in lieu of any irradiated food is excellent for listeria salmonella prevention.

Acidic Calcium Sulfate, ACS 100, (aka Acidified Calcium Sulfate), can also be utilized in other pH adjustment systems, such as a  pH reducer or pH decreaser of the hydroponic pH in a hydroponic solution to help keep the ph down.

Pet food manufacturers also use ACS Technology SafepHix brand Acidic Calcium Sulfate, ACS 100, (aka Acidified Calcium Sulfate) as a pet food acidulant and to manufacturer pet products and pet feed.  This listeria salmonella and food borne illnesses prevention is desired by the feed manufacturer as well as pet products suppliers.

Food microbiology has shown that good food hygiene and food safe temperatures along with use of Acidic Calcium Sulfate, ACS 100, will control Salmonella Listeria, diseases in food and other hazards in food.  This has proven beneficial for controlling Salmonella and Campylobacter with use of ACS Technology SafepHix brand Acidic Calcium Sulfate, FreshFlo or FreshFlo 100, for antimicrobial effectiveness vegetable wash and vegetable cleaner on whole vegetables.  Also used for fruit wash.

Food industry leaders implement a food protection program using ACS Technology SafepHix brand ACS 100, acidic calcium sulfate, to insure quality control of food and any disease of bacteria.  Safety in the food industry is paramount for food quality management and quality control of meat and poultry.  Preventing bacterial food contamination, bacteria food poisoning or foodborne illnesses, such a campylobacter, Listeria m or salmonella food illness is essential food safety in food industry.

ABSTRACT

This study evaluated the effectiveness of warm solutions of acidic calcium sulfate (ACS), lactic acid (LA), ε-polylysine (EPL), ACS plus EPL and sterile distilled water (W) applied to the surface of fresh, pre-rigor beef rounds for reducing Salmonella Typhimurium, Escherichia coli O157:H7 and Listeria monocytogenes applied as a cocktail at a level of 6.4 log cfu/ 50 cm2. All treatments were applied for 15 to 20 s using a stainless steel spray cabinet at 50–55C under a constant pressure. Sequential application of warm ACS, followed by EPL significantly reduced inoculated levels of S. Typhimurium, E. coli O157:H7 and L. monocytogenes, with an extended effect over seven storage days. This combination was more effective than single treatments of ACS, LA, EPL or W alone. From these results, it appears that a sequential application of ACS and EPL could be a better strategy for pathogen reduction in meat plants than a single decontamination treatment.

PRACTICAL APPLICATIONS

A sequential application by spray of acidified calcium sulfate (ACS) followed by ε-polylysine (EPL) reduced pathogens on pre-rigor beef rounds more effectively than a single treatment of ACS, EPL, lactic acid or water. This indicates that multiple interventions can be a better strategy for pathogen reduction than single treatments, and could also provide a more “fail-safe” pathogen reduction strategy. It also appears that combinations of antimicrobial agents that have different modes of action for suppressing pathogen growth, and the sequential application of different decontamination sprays are significant factors for obtaining greater reductions in pathogen numbers on beef carcasses at slaughter.
